Great interview (saw the link via a Jaiku contact). I’m a fan of restaurants with “scratch kitchens” and menus that change a lot based on what’s available locally. I’m digging the name Saphron also.

The food there’s really good also… Really has that hand-prepared, not processed texture and taste to it.
